Grilled Flank Steak

Pat dry a 1 lb flank steak and make horizontal slits across both sides. Put in large ziploc bag.

Combine 4 minced garlic cloves, 1 TB minced fresh ginger (or 1/2 tsp ground ginger), 1/4 c soy sauce, 1/4 c sugar, 2 TB fresh lime juice, and pepper. Slowly whisk in 1 TB toasted sesame oil. Pour over steak and seal bag. Marinate at least 4 hrs- up to 1 day.

Light grill. Remove steak from the bag and pat dry. Transfer marinade to small saucepan. Boil until thickened, about 3 minutes. Keep warm.

Grill meat 6-8 minutes, turning once, until crispy and slightly charred on the outside and medium-rare within.

Allow to rest 10 minutes, then slice. Serve with cooked marinade.
