3 TB peanut butter
1 TB soy sauce
1 lb chicken breasts, cut into lengthwise slices
2 TB peanuts, chopped
1/4 c green onion, chopped (1-2)
Mix dressing, peanut butter and soy sauce. Add chicken and toss to coat. Refrigerate 10 minutes.
Preheat broiler. Remove chicken from marinade. Thread it onto 8 soaked wooden skewers and place on rack in broiler pan.
Broil, 4-6 inches from heat, 4 minutes on each side until cooked through. Serve sprinkled with peanuts and onions over rice.
