Ciabatta or sourdough bread
Shredded rotisserie chicken
1/2 c pickled, sliced jalapeno's
1 c shredded Monterey Jack cheese
White BBQ Sauce
Butter
For the Sauce:
1 c mayo
3/4 c cider vinegar
2 TB lemon juice
1 TB pepper
1/4 tsp red pepper
2 TB cornstarch
1. Prepare BBQ sauce by combining all ingredients, whisking until smooth. Refrigerate until ready to use.
2. Heat a grill pan or skillet. Butter bread slices. Top with shredded chicken, 1-2 TB BBQ sauce, 1-2 TB shredded cheese, jalapenos. Top with remaining buttered bread. Toast each side for about 3 minutes or until browned.
3. Serve with BBQ sauce.
